Cheddar & Chive Smashed Potatoes

Ingredients

  • 3 lbs. red potatoes, cut into quarters
  • Salt and pepper
  • 3 Tbsp. margarine or butter
  • 1 clove garlic, finely chopped
  • 3/4 cup whole milk
  • 4 oz. sharp Cheddar cheese, shredded
  • 1/2 cup reduced-fat sour cream
  • 1/4 cup snipped fresh chives

Preparation

Step 1

1. Cook potatoes fro 30 minutes or until tender

2. Melt margarine. Add garlic and milk. Heat for one minute. Remove from heat and set aside.

3. Drain potatoes and return to pot. Add milk mixture, 1/2 tsp. salt and 1/8 tsp. freshly ground black pepper. Mash and stir in Cheddar, sour cream, and chives. Serve hot.
