Ingredients
- 3 lbs. red potatoes
- 1 large onion, cut into 1" pieces
- 1/4 c. olive oil
- 2 tsp. Kosher salt
- 1 tsp. dried crushed rosemary
- 1/2 tsp. ground black pepper
Preparation
Step 1
Preheat oven to 400 degrees. Line a rimmed baking sheet with heavy-duty foil. In a large bowl, combine potatoes, onion, oil, salt, rosemary, and pepper; toss gently to coat. Spread in a single layer on prepared baking sheet. Bake for 40-45 minutes, stirring occasionally, or until potatoes are browned and crisp. Serve immediately.
