Chicken with Artichokes and mushrooms

Ingredients

  • 1-2 # boneless chicken, cut up
  • 1 can (14oz) artichokes, halved
  • 1/2 C white wine or sherry
  • 1/2 C oil
  • 1 C chicken consomme
  • 2 T butter
  • garlic to taste
  • 1/8 C lemon Juice
  • 1 C Flour
  • 1 # mushrooms, sliced

Step 1

Flour chicken and brown in hot oil. Once browned, 12-15min, remove chicken and drain oil. Saute mushrooms and artichokes in butter. Simmer for 5-10min. Return chicken to pan, add wine, garlic, lemon juice, and consomme. Cover and simmer 10-15min.
