Ingredients

  • 1/2 cup chopped dates
  • 1/4 cup almonds
  • 1 tablespoon honey (and extra honey for drizzling on chicken)
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice (and extra for squeezing on chicken)
  • 1 1/2 pounds chicken breasts at least 1 1/2" thick
  • 1 teaspoon rosemary
  • 1 teaspoon thyme
  • Garlic salt, to taste
  • Few pinches of black pepper

Step 1

Preheat the oven to 350 degrees. In a blender or food processor, combine the dates, almonds, honey, 1 tbsp olive oil, and lemon juice until well mixed.

Cut a pocket in each chicken breast without cutting all the way through. Spoon some of the stuffing into each breast.

Place the chicken breasts into a casserole dish. Drizzle with remaining olive oil, sprinkle with garlic salt, black pepper, rosemary and thyme. Finish off with a bit more lemon juice and drizzle each breast with a bit more honey (to your liking).

Cover the dish and bake for 20 minutes. Uncover and bake until the chicken is brown, about 10 minutes.

This recipe yields 6 servings. Serving size: 3 ounces.
