Date And Almond-Stuffed Chicken
Based on Date and Cashew-Stuffed Chicken Recipe
Ingredients
- 1/2 cup chopped dates
- 1/4 cup almonds
- 1 tablespoon honey (and extra honey for drizzling on chicken)
- 2 tablespoons olive oil
- 2 tablespoons lemon juice (and extra for squeezing on chicken)
- 1 1/2 pounds chicken breasts at least 1 1/2" thick
- 1 teaspoon rosemary
- 1 teaspoon thyme
- Garlic salt, to taste
- Few pinches of black pepper

Preparation
Step 1
Preheat the oven to 350 degrees. In a blender or food processor, combine the dates, almonds, honey, 1 tbsp olive oil, and lemon juice until well mixed.
Cut a pocket in each chicken breast without cutting all the way through. Spoon some of the stuffing into each breast.
Place the chicken breasts into a casserole dish. Drizzle with remaining olive oil, sprinkle with garlic salt, black pepper, rosemary and thyme. Finish off with a bit more lemon juice and drizzle each breast with a bit more honey (to your liking).
Cover the dish and bake for 20 minutes. Uncover and bake until the chicken is brown, about 10 minutes.
This recipe yields 6 servings. Serving size: 3 ounces.
