Orange-Ginger Couscous

Ingredients

  • Peel the thin skin from fresh ginger b y scraping it away with the side of a spoon.
  • 1/4 c. sliced almonds
  • 2 c. orange juice
  • 1/3 c. sweetened dried cranberries
  • 1/2 Tb. butter
  • 1 tsp. orange zest
  • 1 tsp. minced fresh ginger
  • 1/2 tsp. salt
  • 1/4 tsp. ground cinnamon
  • 1 (10 oz.) pkg. coucous

Preparation

Step 1

1. Preheat oven to 350 degrees. Bake almonds in a single layer in a shallow pan 4-6 minutes or until toasted and fragrant.

2. Bring orange juice and next 6 ingredients to a boil in a saucepan over medium heat; remove from heat.

3. Stir in couscous. Cover and let stand 5 minutes. Fluff with a fork; stir in almonds.
