Ingredients

  • 8 Flour tortillas
  • 4-5 cups of shredded cheddar cheese
  • 1 lb ground meat: pork, chicken or beef
  • 1 packet of taco or burrito seasoning
  • 1 can of corn OR hominy
  • 1 can of black beans
  • 4 tomatoes, diced
  • 1 jalapeño pepper, finely chopped
  • 1/2 red onion, diced
  • 1 mango, finely diced
  • 2 avocados, mashed w/tbsp of lime juice

Preparation

Step 1

Meat Layer:

Cook ground meat in a skillet until fully cooked, add ½ cup water and seasoning packet. Cook until water is almost gone; add black beans and corn (or hominy). Keep warm until assembly.

Tomato Sauce Layer:
Cook tomatoes, onion, jalapeño and mango in a skillet until tender. Turn off heat. Add avocados and stir.

Assembly:

Toast the tortillas (I toast them under the broiler)

Preheat oven to 425. Put a thin layer of the tomato sauce on the bottom of a casserole dish. Lay down two tortillas. Add a layer of the meat, and cover with cheese. Lay down two tortillas. Put a layer of the tomato sauce on. Lay down two tortillas. Add a layer of the meat, and cover with cheese. Lay down two tortillas. Put a layer of the tomato sauce on and cover with cheese. Cook in oven until melty.
