Ingredients

    lb. Ground Beef

  • 3

    Cups Beef Stock

  • 1

    Can Diced Tomatoes, partly drained

  • 2

    Cans Dark Red Kidney or Black Beans

  • 1/2

    Onion, Chopped

  • 1/2

    Green Pepper, Chopped

  • 2

    Cloves of Garlic, Minced

  • 4

    tbsp Olive Oil

  • 2

    tbsp Flour

  • 1

    Chili seasoning packet

  • 2

    tbsp Paprika

  • 1/2

    tbsp Cumin

  • 1/2

    tsp Cayenne (or more for more heat)

  • 1/4

    cup Chili Sauce

Directions

In a medium frying pan on medium high, heat 2 tbsp of EVOO and brown the ground beef with ½ the seasoning packet. In a large soup pot on medium high, heat 2 tbsp of EVOO and add onion, green pepper and garlic, cook until soft. Add flour and 1/3 cup of Beef stock. Cook 3 minutes more. Drain one can of beans and add to the pot, and leave the other with the liquid and add to the pot. Cook 2 minutes more. Add the remaining ingredients and simmer for 20 – 30 minutes. Ground beef and beef stock can be replaced with ground turkey/chicken and chicken stock.
