Ingredients
- 1 lb. Ground Beef
- 3 Cups Beef Stock
- 1 Can Diced Tomatoes, partly drained
- 2 Cans Dark Red Kidney or Black Beans
- 1/2 Onion, Chopped
- 1/2 Green Pepper, Chopped
- 2 Cloves of Garlic, Minced
- 4 tbsp Olive Oil
- 2 tbsp Flour
- 1 Chili seasoning packet
- 2 tbsp Paprika
- 1/2 tbsp Cumin
- 1/2 tsp Cayenne (or more for more heat)
- 1/4 cup Chili Sauce

Preparation
Step 1
In a medium frying pan on medium high, heat 2 tbsp of EVOO and brown the ground beef with ½ the seasoning packet. In a large soup pot on medium high, heat 2 tbsp of EVOO and add onion, green pepper and garlic, cook until soft. Add flour and 1/3 cup of Beef stock. Cook 3 minutes more. Drain one can of beans and add to the pot, and leave the other with the liquid and add to the pot. Cook 2 minutes more. Add the remaining ingredients and simmer for 20 – 30 minutes.
Ground beef and beef stock can be replaced with ground turkey/chicken and chicken stock.
