Ingredients

  • 2 C flour
  • 1 Tbsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 tsp ginger
  • 1/2 tsp allspice
  • 2 eggs
  • 1 C lightly packed brown sugar
  • 3/4 pumpkin purée
  • 1/2 C butter, melted then cooled
  • 1 tsp vanilla extract
  • Icing
  • 1/2 250-g pkg cream cheese, room temp
  • 1 2/3 C sifted icing sugar
  • 1/4 C unsalted butter, room temp
  • 3 Tbsp maple syrup
  • 5 Slice bacon finely chopped

Preparation

Step 1

Preheat oven to 350F

Whisk flour, baking powder and soda, and spices in bowl.
Whisk eggs, brown sugar, pumpkin, butter and vanilla.
Gradually whisk flour mixture and egg mixture, spoon into baking pan
Bake 20-25 min
Icing
Beat everything together, add bacon. Refrigerate until firm, pipe or spread on cupcakes
