Potatoes - made red with chile powder

Ingredients

  • 2 Tbsp. butter
  • 3 Tbsp. olive oil
  • 1 medium onion, cut in half lengthwise and sliced
  • 4 large white potatoes, thinly sliced
  • 1/2 tea. salt
  • 1 tea. pepper
  • 1 tea. ground mild New Mexico red chile, or to taste

Preparation

Step 1

Melt butter in a frying pan, add olive oil, and saute the onion for 2-3 minutes. Add the potatoes, salt, pepper, and ground red chile. Saute, for 20-30 minutes or until the potatoes are done through and lightly browned.
