Pistachio Biscotti with White Chocolate Topping

Ingredients
- 1/2 C butter
- 1 1/2 C sugar
- 1 t baking soda
- 1 t baking powder
- 1/2 t salt
- 2 eggs
- 1 t lemon zest
- 1 t lemon extract
- 3 c flour
- 1 c chopped pistachios
- 1 c chopped macadamia nuts
- 12 oz good white chocolate
- 1/4 c finely chopped pistachios
- 1/4 c finely chopped macadamia nuts

Preparation
Step 1
Oven 350 degrees
Mix everything but the white chocolate and finely chopped nuts. shape into 2 logs. Bake 350 for 35-40 Minutes or until beginning to brown. Remove and slice. Return to oven and bake 5 minutes more on each side. Melt chocolate in microwave carefully. If chocolate is too thick add 1-2 T Crisco to thin it. Spread some on each biscotti and sprinkle with nuts.
