Ingredients

    cup polenta

  • 1

    T. garlic, chopped (optional)

  • Sea salt

  • 3-4

    sprigs parsley, chopped (optional)

  • Extra virgin olive oil

  • 1

    bunch asparagus, or 1 package frozen asparagus, thawed

  • 1/4

    lb. prosciutto, thinly sliced (optional)

Directions

Cook a cup of polenta according to the package instructions. You can mix in chopped garlic, salt, olive oil and parsley into the polenta just before it is done. Turn the polenta out onto a plate to cool and slice into wedges. You can also purchase pre-cooked polenta (it is packaged like a cylinder, so you can slice into rounds and bake to reheat). Top each polenta wedge with a poached asparagus slice, and wrap with prosciutto if you wish.
