Salmon with brown butter, almonds and green beans

Ingredients

  • 4 Tbsp. unsalted butter
  • 1 1/4 lb. salmon, cut into 4 pieces
  • 1 lb. green beans, trimmed and cut in half
  • 1/4 cup sliced almonds
  • 2 Tbsp. capers

Preparation

Step 1

Heat 1 Tbsp. butter in non-stick skillet over medium heat. Season salmon with salt and pepper. Cook until opaque (3-5 mins. poer side), Transfer to a plate.

Fill 2nd skillet with 1/2" water, bring to a boil. Add 1/2 tea. salt. Add beans, cover and steam until just tender (4-5 minutes). Drain and transfer to the plates.

Wipe out bean skillet and heat remaining 3 Tbsp. butter over medium heat. Add almonds and cook stirring frequently until almonds and butter are golden brown (but not burned) 2-3 minutes. Stir in capers. Spoon over fish and green beans.
