Apple Cobbler A La Mode

Although this recipe calls for walnuts, I usually skip them. But - delicious either way. This is from my Southern Living Five-Star Recipe Collection from the early 1990's. I guess that means I've been making it for two decades! Mmmmmmmm.

Ingredients
- APPLE LAYER:
- 6 c. peeled, sliced cooking apples
- 1 c. chopped walnuts *OPTIONAL*
- 1/2 c. firmly packed brown sugar
- 1 t. ground cinnamon
- COBBLER LAYER:
- 1 c. flour
- 1 c. sugar
- 1 t. baking powder
- 1/4 t. salt
- 1/4 t. ground ginger
- 1/2 c. half-and-half
- 1/2 c. butter, melted
- 1 egg, beaten
- 1/2 c. chopped walnuts *FOR TOPPING*
Preparation
Step 1
Place sliced apple, chopped walnuts, brown sugar and cinnamon in a large bowl. Toss gently to combine. Spread apple mixture in a greasted 11x7 baking dish. Set aside.
Combine flour, 1 c. sugar, baking powder, salt and ginger in a large bowl. Stir well. Combine half-and-half, melted butter and egg; stir well. Add liquid ingredients to dry ingredients, stirring just until blended. Pour batter over apple mixture; sprinking with remaining 1/2 c. chopped walnuts (optional).
Bake at 350 for 45 minutes to 1 hour, or until lightly browned. To serve, spoon warm cobbler into individual serving bowls. Top each serving wtih a scoop of vanilla ice cream.
