Mocha Pound Cake

Ingredients

  • 2 tsp. instant coffee granules
  • 2 tsp. hot water
  • 1/2 c. butter, softened
  • 2 c. sifted powdered sugar
  • 1 (10 oz.) pound cake
  • 1 (3.5 oz.) jar macadamia nuts, chopped
  • 1 qt. vanilla ice cream
  • 1 c. chocolate sauce
  • 1 c. caramel sauce

Preparation

Step 1

Dissolve coffee granules in hot water.

Beat butter at medium speed with an electric mixer until creamy; gradually add sugar, beating until light and fluffy. Add coffee, and beat until spreading consistency. Set frosting aside.

Trim crust from cake. Cut cake into 6 pieces. Spread frosting on top and sides of pieces; roll in nuts. Top with ice cream and drizzle with sauces.

Note: You can substitute 3/4 c. chopped cocktail peanuts for the macadamia nuts.
