Ingredients
- 2 1/2 c. flour
- 5 Tb. sugar
- 2 tsp. baking powder
- 1/4 tsp. salt
- 1/2 c. coconut
- 1/2 c. butter
- 1/2 c. dried cherries
- 2 Tb. grated orange rind
- 1/2 c. milk
- 2 eggs
- 3 Tb. milk
- coarse red sugar
Preparation
Step 1
In a large bowl, mix together dry ingredients and coconut; cut in butter. Stir in cherries and orange peel. In a separate bowl, mix together 1/2 cup milk and eggs. Make a well in the dry ingredients. Add milk and egg mixture. Stir until just moistened. Turn dough onto floured surface. Knead 7-9 times (dough will be sticky). On a lightly greased baking sheet, pat dough into an 8" circle. Cut into 10 wedges but do not separate. Brush with 3 Tb. milk and sprinkle with red sugar. Bake in a 400 degree oven for 20 minutes. Place on a wire rack. Separate scones; store in an airtight container.
