Pecan Chicken and Waffles

Ingredients

  • 1/4 C butter or margarine
  • 3 tsp chicken bullion crystals
  • 1/3 C flour
  • 1/4 tsp poultry seasoning
  • 2 1/2 C milk
  • 1 T lemon juice
  • 2 C cubed cooked chicken
  • 1/2 C chopped celery
  • 1/2 c coarsely chopped pecans
  • 4-8 cooked waffles

Preparation

Step 1

- In saucepan, melt butter; add bullion; mix milk with flour and pooultry seasoning; whisk or shake well and stir into butter; add lemon juice; cook and stir until bubbly over medium heat; stir in chicken, celery and all but 2 T of the pecans; heat thoroughly
- Serve over 1 - 2 waffles and top with reserved pecans
