Basic Vegetable Broth
A simple recipe for homemade vegetable broth or stock using left over vegetables scraps of onions, celery and carrots from your fridge

Ingredients
- 1 unpeeled carrot, chopped
- 1 onion, quartered
- 1 stalk celery, chopped
- 3 cloves garlic, chopped
- 2 leaves, big leaf thyme
- 6 cups water
Preparation
Step 1
Combine water and vegetables in a deep pot.
Bring to a high boil for 20 minutes
Lower temperature for 10 minutes
Turn off stove and leave vegetables to steep in water for an hour
Strain liquid from vegetables
Store in airtight bottle in fridge or freeze
