Lemon Squares

Ingredients

  • 2 c. flour
  • 1/2 c. + powdered sugar
  • 2 sticks butter, melted
  • 2 c. sugar
  • 1 tsp. baking powder
  • 4 eggs, slightly beaten
  • 1/4 c. fresh lemon juice
  • 1 Tb. + 1 tsp. grated lemon zest

Preparation

Step 1

Preheat oven to 350 degrees. Lightly grease 9x12 baking dish. Sift flour and powdered sugar into a bowl. Add the melted butter, blend and press into the pan. Bake 20 minutes or just until golden. While baking, combine sugar, baking powder, eggs, lemon juice, and lemon zest in a bowl. Pour the sugar mixture over the warm crust and bake 25 more minutes. Cool on a rack. Cut into squares and chill. Before serving, sprinkle with more powdered sugar. Store in an airtight container.
