Lemon Rice Pilaf

Ingredients

  • 1/4 c. butter
  • 4 celery ribs, sliced
  • 6 green onions, sliced
  • 2 c. uncooked long-grain rice
  • 1 (32 oz.) container chicken broth
  • 2 Tb. lemon zest
  • 1/2 tsp. salt
  • 1/4 tsp. pepper

Preparation

Step 1

1. Melt butter in a large skillet over medium-high heat; add celery and green onions, and saute 3-4 minutes or until celery is tender. Stir in 2 cups rice, and saute 2 minutes or until golden brown. Stir in broth, and bring to a boil. Cover, reduce heat to low, and simmer 20 minutes or until liquid is absorbed and rice is tender. Stir in lemon zest, salt and pepper.
