Ingredients

  • 2 tblsp. canola oil
  • 2 stalks celery, chopped
  • 1 medium onion, chopped
  • 1 green pepper, chopped
  • 1 28 oz. can diced tomatoes, undrained
  • 1 19. oz. can red kidney beans, undrained
  • 1 16-19 oz. can pinto beans, undrained
  • 2 small zucchini, diced
  • 1 large carrot, coarsely shredded
  • 1 pkg. chili seasoning
  • 1 4 oz. pkg. shredded cheddar cheese

Preparation

Step 1

1. In a dutch oven heat oil & saute celery, onion, & green peppper until tender.
2. Stir in tomatoes, kidney & pinto beans, zucchini, carrot & chili seasoning.
3. Bring to a boil.
4. Reduce heat to medium-low, cover & cook a5 minutes, stirring occasionally.
