Mom's Kielbasa and Kraut

Ingredients

  • 2 bags sauerkraut
  • 1 lb. bacon
  • 2 pkgs kielbasa or polish sausage
  • 1 bag chopped cabbage
  • brown sugar
  • bay leaves
  • peppercorns

Preparation

Step 1

In colander, rinse and mash dry 2 bags sauerkraut. In large skillet saute on med. heat one lb. bacon, cut into 1/2" pieces. Remove bacon from pan. Cut 2 pkgs. kielbasa into 1/2" slices. Saute in bacon grease on med. heat, turning individually when brown. Saute other side. Remove from grease. In crock pot, layer as follows: bacon, sauerkraut, 1/2 bag chopped cabbage, 2 handfuls of brown sugar, kielbasa, 2 bay leaves, handful of peppercorns (and a little bacon grease too). Repeat layers. Cook 4-6 hours. Remove bay leaves. Enjoy!
