Ingredients
- SAUTÉ:
- 1 cup diced onions
- 1 cup diced carrots
- 1 Tbsp. minced fresh garlic
- 1 cup dry long-grain white rice
- 2 Tbsp. peanut oil
- ADD:
- 13 ⁄4 cups low-sodium chicken broth
- 2 cups small broccoli florets
- 1 ⁄2 cup sliced almonds, toasted
- 2 Tbsp. fresh lemon juice
- Salt and black pepper to taste

Preparation
Step 1
Sauté onions, carrots, garlic, and rice in oil in a saucepan over high heat until vegetables begin to soften, about 5 minutes.
Add broth and bring to a boil; reduce heat to low and simmer, covered, until liquid is nearly absorbed, 12 minutes. Add broccoli and cook 3 minutes more.
Off heat, stir in almonds and lemon juice; season with salt and pepper. Let rice rest, covered, 5 minutes.
