Ingredients
- 1/2 C cornbread mix
- 1/4 C grated parmesian cheese
- 1/4 tsp salt
- 1/8 tsp pepper
- 2 eggs (1 egg and 1 Eggbeater egg)
- 1/2 C half and half (may use FF)
- 1 T canola oil
- 1 C sliced zucchini
- OR 3/4 C zucchini and 1/4 C mushrooms
- OR 1 C shredded carrots
Preparation
Step 1
- Combine muffin mix, cheese, salt and pepper; stir in eggs, cream, eggs, oil until blended; fold in veggies
- Pour into sprayed 7 inch pie plate; bake at 375 for 40 - 45 min until knife comes out clean; let stand 10 min. before cutting
- TIP - combine leftover cornbread mix with 3 T milk and 2 T beaten eggs (from 2-Eggbeater container); bake as directed on box.
