Ingredients
- 1 tablespoon olive oil
- 1 red onion, thinly sliced
- 1 jalapeno pepper, seeded and chopped
- 2 tomatoes, diced
- 1 tablespoon minced garlic
- 1 tablespoon chopped fresh oregano
- 1/2 cup roughly chopped green olives
- 1/3 cup chicken stock or broth
- 1 1/2 lbs. sea scallops, rinsed
- Juice of 1/2 lime
- 1/8 teaspoon red pepper
- Salt and pepper
Preparation
Step 1
1) Heat oil on high heat until sizzling.
2) Place onion and jalapeno pepper in the cooker, and saute, just until onion is translucent.
3) Add tomatoes, garlic, oregano, olives, and chicken stock to the cooker and stir.
4) Place scallops on top of everything in the cooker. Squeeze lime juice over top, and sprinkle with salt and pepper.
5) Lock lid and cook at 15 psi for 2 minutes.
6) Perform a quick release. Serve immediately.
