Ingredients
- 1 LB grd beef
- 1 sm. onion, chopped
- 1 pkg (6-oz) four-cheese corkscrew pasta mix
- 2 C salsa
- 1 C hot water
- 1 TBL chili powder
- 1/2 tsp salt
- dash cayenne pepper
- 1 can (14-1/2 oz) diced tomatoes, undrained
- 1 can (2-1/4 oz) sliced ripe olives, drained
- 1 C (4oz) shredded cheddar cheese
- sour cream, optional
Preparation
Step 1
in lg. skillet, cook beef & onion over med heat until meat is no longer pink
drain
stir pasta, contents of seasoning packet, salsa, water, chili powder, salt & cayenne into skillet
bring to boil
reduce heat
cover & simmer for 15 min or until pasta is tender, adding more water if necessary
stir in tomatoes
sprinkle w/ olives & cheese
cover & simmer for 3-4 min or until heated through
serve w/ sour cream if desired
