Mexican Chicken Chili

Ingredients

  • 1 LB boneless skinless chicken breasts, cubed
  • 1 TBL canola oil
  • 2 cans (14-1/2oz each) diced tomatoes, undrained
  • 2 C frozen corn
  • 1 can (15oz) black beans, rinsed & drained
  • 1 can (14-1/2 oz) chicken broth
  • 1 can (4oz) chopped green chillies
  • 2 TBL chilli powder
  • 1 TBL grd. cumin
  • 1/2 tsp salt
  • 1/4 tsp cayenne pepper

Preparation

Step 1

i sm. skillet, brown chicken in oil

transfer to 5-qt slow cooker
stir in remaining ingredients
cover & cook on low for 5-6 hrs or until chicken is no longer pink
