Hot Pepper Summer Squash

Ingredients

  • 1 Tb. butter
  • 1 1 /2 c. sliced yellow summer squash
  • 1 1/2 c. sliced zucchini squash
  • 1/2 tsp. dried oregano leaves
  • 1/4 tsp. salt
  • 1/2 c. shredded hot pepper Monterey Jack cheese

Preparation

Step 1

In a 2-qt. casserole, microwave butter at HIGH for 45 seconds to 1 minute, or until melted. Stir in squashes, oregano and salt. Cover. Microwave at HIGH forf 4-6 minutes, or until squashes ore tender-crisp, stirring once. Stir in cheese. Re-cover. Let st6nad for 1 minute, or until cheese is melted. Before serving, toss gently.
