  • ● 1 pound (20) shrimp, peeled
  • ● 1/2 cup jerk marinade—pureed in food processor
  • ○ 1 tbsp. pepper
  • ○ 2 cloves garlic
  • ○ 1 tbsp. ginger
  • ○ 1 onion
  • ○ 1 tbsp. thyme, chopped
  • ○ 1 tbsp. allspice
  • ○ 3/4 tsp nutmeg
  • ○ 3/4 tsp cinnamon
  • ○ 1 tsp pepper
  • ○ 1 tbsp. brown sugar
  • ○ 1 tbsp. oil
  • ○ 2 tbsps. white vinegar
  • ○ 2 tbsps. soy sauce
  • ○ 1 tbsp. dark rum
  • ○ 1/2 orange, juice and zest
  • ○ 1 lime, juice and zest
  • ● pineapple, cut into 1/2 inch pieces

Preparation

Step 1

1. Marinate the shrimp in the half of the jerk marinade for at least 20 minutes and up to overnight.
2. Skewer the shrimp and pineapple and grill over medium-high heat until cooked, about 2-3 minutes per side.
