Beet Dip with Cotija Cheese

Ingredients

  • 4 medium beets (about 1 lb.), greens removed, scrubbed
  • 2 Tbsp. olive oil, divided, plus more for drizzling
  • 3/4 tsp. kosher salt, divided
  • 1/4 tsp. freshly ground black pepper
  • 1/4 cup toasted pine nuts
  • 1/4 cup cilantro leaves and tender stems, plus more for garnish
  • 1/2 tsp. ground coriander
  • 2 Tbsp. thinly shaved cotija cheese
  • 1 bag STACY'S® SIMPLY NAKED® Pita Chips

Preparation

Step 1

1. Preheat oven to 375°.
2. Place beets on large sheet of foil; drizzle with 1 Tbsp. olive oil and rub to coat evenly.
3. Sprinkle with 1/2 tsp. salt and pepper.
4. Wrap foil fully over beets, creating a packet. Place on baking sheet and bake for 1 hour; cool completely in foil packet.
5. Open packet; rub beets skins off using a paper towel.
6. Transfer cooked beets to a food processor bowl; add 1 Tbsp. olive oil, 1/4 tsp. salt, pine nuts, cilantro, and coriander. Process until smooth.
7. Transfer to serving dish; top with cotija cheese, olive oil drizzle, and cilantro garnish.
8. Serve with STACY'S® SIMPLY NAKED® Pita Chips
