Cherry Crepes

  • Fruit Sauce:
  • 1 C self rising flour
  • 1 t sugar
  • 4 eggs
  • 1 1/2 whole milk
  • 2 T oil
  • 1 package frozen berries (or 1 qt fresh pitted sour cherries)
  • 1/2 C sugar
  • 1 T cornstarch

Step 1

1. Crepes: Beat eggs and all other ingredients. Blend until smooth. Heat over medium heat in 10" skillet which has been lightly buttered. Add 3 T of batter and swirl to coat bottom of pan. Cook until top of crepe is dry then flip and cook for another 30 seconds. Crepes should be very thin.

2. Fruit Suce: Combine ingredients and heat over medium high heat, stirring until sugr melts and sauce thickens. Sauce can be made the night before, refrigerated and heated just before serving.

3. T serve, fold crepes in half and in half again to form triangles. Place 3 on plate, ladle hot fruit sauce over crepes. Dust with powdered sugar. May be served with sausage or bacon as a brunch.
