Mint & Ricotta Caramelle


Light, fresh, lemony, minty ricotta cheese filled mini rolls of pasta

  • The stuffing for these delightful caramelle is very simple:
  • 12 oz of fresh ricotta cheese
  • 1 handful of mint, de-stemmed and chopped (save a couple of teaspoons for the end)
  • Zest of one lemon
  • A large handful of freshly grated Parmesan cheese
  • A dash of nutmeg, if you like it



Step 1

Combine above ingredients to make the stuffing. Pinch the caramelle together and cook in plenty of boiling salted water. To serve, toss the cooked caramelle in a saucepan with a pat or two of butter. Squeeze in the juice of half a lemon. Just before bringing to the table, add the reserved chopped mint. You can also serve with freshly grated Parmesan.
