Dill Fettuccine with Salmon & Vodka Sauce

Ingredients

  • 1 large bunch of dill, de-stemmed and chopped
  • 1/2 a sweet onion, like Vidalia or Walla-Walla. Shallots or red onion will do
  • 1/2 a pound of smoked salmon, flaked
  • 1/2 a pint of cream
  • 1 shot of vodka

Throw the dill into the pasta dough recipe. Crank through the machine into fettuccine.

These guys are really simple to make. Here, just run a pasta sheet through the thinnest or next-to-thinnest setting a couple of times. The more you work the dough, the more pliable it becomes! Now, spread out the sheet of pasta and cover half of the surface with herbs. I find that dill and parsley work the best, though use the herbs that you like. Remember to give ample distance between the herbs, as they will flatten out when rolled. Fold the un-herbed half over the herbed-half, and put once more through the pasta machine. Beautiful! Cut into squares, rectangles, or whatever shape pleases you. These look great in a clear chicken broth or also are delicious just topped with butter and a squeeze of lemon.


To make the salmon vodka sauce, sauté the onion in a little pat of butter until soft. Add the salmon and cream and gently heat until the cream is infused. Add vodka or a squeeze of lemon if you prefer.

Cook the pasta in plenty of water until it is done. (Consider not adding salt to the water this time, since the salmon sauce may be on the salty side.) Only a couple of minutes! Gently toss the pasta in the warm sauce and voila! Ready to serve.
