Zucchini Pancakes

  • 1/3 c Bisquick
  • 1/4 c grated parmesan cheese
  • 2 eggs, slightly beaten
  • 2 c shredded zucchini
  • dash of pepper


Servings 4


Step 1

Mix bisquick, parmesan cheese and pepper. Add eggs and stir until moist. Stir in zucchini. Melt butter in a pan and drop by tablespoonfuls into pan forming pancakes. Fry until brown and crisp on each side.
