Stuffed Artichokes

Ingredients

  • artichokes
  • breadcrumbs
  • olive oil
  • salt
  • pepper

Preparation

Step 1

1. Mix together flavored bread crumbs, garlic, parsley, grated cheese, and small amount of oil
2. Prepare artichokes by cutting off pointy tips of leaves and trimming the stem.
3. Wash artichokes and bang upside down on counter to help open leaves
4. Stuff each leaf with the bread crumb mixture
5. Place in large pot with ¼ inch of oil in ½ cup water
6. Drizzle oil over artichokes
7. Cover!
8. Cook on medium
9. Baste with liquid while cooking
10. Cook until middle leaf pulls out easily and is soft (approx. 45-60 min)
