Watermelon, Feta & Mint Salad

Mom used to encourage us to begin every meal with fruits. “Cleanses the palate”, she used to say. While the idea of fruits as an appetizer seemed odd, the watermelon salad completely vindicated it. Refreshingly exciting, the sweetness of the watermelon mingles with the savoriness of the crushed feta and crisp mint leaves, making it a delightful and light starter or snack.

Ingredients

  • For mint dressing:
  • 1.5 kg watermelon, rind and seeds removed
  • Half a small red onion, thinly sliced
  • 150 g feta cheese
  • 20 g of fresh mint, finely chopped
  • 3 tbsp extra virgin olive oil
  • 1 tbsp lime juice
  • 2 tbsp red wine vinegar
  • 2 tsp sugar, to taste
  • Salt and black pepper, to taste

Preparation

Step 1

1. Cut chilled watermelon into bite-size cubes. Remove any seeds you see along the way and set it aside in the refrigerator for later use. Thinly slice onion and soak them in an ice bath for 5 to 10 minutes.
2. Combine finely chopped mint, red wine vinegar, lime juice and olive oil in a bowl. Mix well and season with sugar, salt and pepper to taste.
3. In a large mixing bowl, add in watermelon cubes and onion. Gently crumble chunks of feta cheese and drizzle mint dressing over it. Mix well, season again if necessary and serve. It is best enjoyed chilled!
