Ingredients
- 1/2 cup bulgar wheat
- 2 tomatoes chopped
- 2 spring onions chopped
- 1 deseeded cucumber chopped
- 2 cups parsley chopped
- 1/2 cup mint chopped

Step 1
Soak bulgar wheat for 20 mins
Mix all together in a large bowl, and pour on dressing made with 1/2 cup olive oil, 1/2 tsp lemon zest, juice of lemon, salt and pepper.
