Ingredients
- 24 large shrimp, shelled and deveined
- GARLIC LIME MARINADE
- 1 c olive oil
- 4 cloves garlic, minced
- Juice of 1 lime
- 1 T dried oregano
- 1 oz tequila
- 1 jalapeno, seeded and finely chopped
- 1/2 T salt
- LIME AIOLI
- 1 egg
- 3 cloves garlic, minced
- Juice of 1 lime
- 1 t lime zest
- 1/4 t cayenne
- 1 c olive oil
- Salt to taste
Preparation
Step 1
1. Make the marinade. In a bowl whisk together all ingredients and marinade shrimp for 1 hr, turning frequently.
2. Make the aioli. Place egg, garlic, lime zest, lime juice, and cayenne in food processor. Pulse briefly. Gradually add oil in a thin stream, with the processor running, until aioli is emulsified. Add salt and more cayenne to taste. Keep refrigerated until use.
3. Grill shrimp 2-3 mins per side over high heat.
4. Serve shrimp with aioli.
