Ingredients
- 8 c. all-purpose flour
- 2 tsp. salt
- 2 pkg. active dry yeast
- 3/4 c. butter, divided
- 2 c. grated Cheddar cheese
- 1 1/2 c. milk
- 1/3 c. honey
- 3 eggs
Preparation
Step 1
In a large bowl, combine 6 c. flour, salt and yeast; stir until well blended. In a medium saucepan, combine 1/2 c. butter and next 3 ingredients. Cook over medium heat until a thermometer registers 130 degrees (butter may not be completely melted). Add eggs and cheese mixture alternately to dry ingredients, mixing until a soft dough forms. Gradually stir in remaining flour. Turn dough onto a lightly floured surface; knead about 10 minutes or until dough becomes soft and elastic. Transfer to a large greased bowl. Melt remaining butter in a small saucepan over low heat. Brush top of dough with 1/2 of melted butter and cover. Let rise in a warm place (80-85 degrees) 1 hour or until doubled in size.
Turn dough onto a lightly floured surface and punch down. Shape dough into 3" balls and place with sides touching in greased round 9" cake pans. In necessary, remelt remaining butter. Brush tops of rolls with melted butter and cover. Let rise about 1 hour or until doubled in size.
Preheat oven to 375 degrees. Bake 30-35 minutes or until golden brown. Cool completely in pan. Store in an airtight container. Give rolls with instructions for heating.
To reheat, preheat oven to 350 degrees. Bake rolls uncovered 3-5 minutes or until heated through.
