Chopped Caprese Salad with Fresh Spinach and Quick Balsamic

Ingredients

  • 5 ounces fresh spinach leaves
  • 3 tomatoes
  • 12 ounces fresh mozzarella (I used 1-1/2 8-ounce packages)
  • 3/4 ounce packed fresh basil leaves
  • 1/4 cup olive oil
  • 2 tablespoons balsamic vingar
  • Salt and pepper to taste

Preparation

Step 1

1. Divide the spinach among 4 plates. Dice the tomatoes and mozzarella and evenly distribute on the spinach. Chop the basil and sprinkle on top of the plates.
2. In a small jar combine the olive oil, balsamic vinegar, salt and pepper. Shake vigorously until emulsified. Drizzle onto the salads and serve.
