Ingredients
- 8 oz thick spaghetti
- 4 large eggs
- 2 large egg whites
- 15 oz part skim ricotta
- 3/4 c 2% milk
- 1/8 tsp nutmeg
- 1/4 tsp salt
- 1/2 tsp pepper
- 1 t butter
- 1 bunch scallions cut into 1/4" pieces (about a cup)
- 4 about 4oz prosciutto sliced thin
Preparation
Step 1
1) preheat oven to 350. meanwhile cook spaghetti about 2 minutes less than directions
2) in md bowl whisk eggs, whites, ricotta, milk, salt, pepper and nutmeg. set aside. in 12" nonstick skillet with oven safe handle, melt butter over md heat. add scallions and cook til softened, about 5 minutes. remove from heat.
3) drain spaghetti. add spaghetti to onions in skillet and toss to combine. pour egg mixture over pasta and arrange prosciutto on top.
4) place skillet over md high heat and cook egg mixture 3-5 minutes or til edges set. place skillet in oven and bake 15 minutes or til center is set.
