Ingredients
- Using premade puff pastry makes these bite-size delights simple and easy.
- 1/2 (7 oz.) pkg. cream cheese
- 1/2 (8 oz.) pkg. feta cheese
- 3 scallions
- 1/4 c. fresh mint leaves
- salt and pepper to taste
- 1 egg yolk
- 1 Tb. heavy cream
- 2 pkg. puff pastry
Preparation
Step 1
1. In a food processor, combine cream cheese, feta cheese, scallions, mint, salt, and pepper, and puree until herbs and cheese are well blended. Refrigerate at least 1 hour.
2. Preheat oven to 375 degrees.
3. Make an egg wash by whisking together egg yolk, cream and salt.
4. Defrost puff pastry per directions on package. Using a cookie cutter or cup, cut 10-12 circles into the puff pastry dough (about the size of the palm of your hand). Place a dollop of cheese mixture in the center of each circle. With a brush, paint the outer rim with egg wash. Fold the circle in half and seal the outside rim by pressing with a fork.
5. Place puffs on a greased sheet tray and brush tops with egg wash. Bake until golden brown, 20-25 minutes.
