- 1/4 cup shallots
- 1 tsp thyme.

Step 1
Combine ingredients
Reduce over a low heat
Strain into 1 cup quick brown sauce
Add 1 tbsp. cognac and ½ tsp lemon juice. Simmer for 1 minutes
Add 1 tbsp. chopped parsley.
Serve.
