The last minute whisking and stirring usually required to make a gravy can frazzle even the most seasoned kitchen veteran. This is the magic trick to give you perfect gravy every time. If you have a family of gravy lovers, double the recipe.

Ingredients

  • 6 tablespoons unsalted butter
  • 6 tablespoons all-purpose flour
  • 4 cups chicken broth
  • salt and freshly ground black pepper

Step 1

In a medium-size saucepan over medium-high heat, melt the butter, then whisk in the flour until incorporated and white bubbles begin to form on the surface. Cook, whisking constantly, 2-3 minutes longer. Gradually add the broth, whisking constantly until the gravy is thickened and comes to a boil.

Remove from the heat and season with salt and pepper.

*At this point, you can let cool, cover, and refrigerate for 3-4 days or freeze for up to 2 months. Defrost if necessary and gently reheat before continuing.

When you are ready to serve the gravy, stir in any pan drippings or deglaze the roasting pan with the gravy, scraping up any bits stuck to the bottom, and heat through.
