Heavenly Hot Chocolate in a Hurry

After you prepare the mix, you can refrigerate the rich chocolatey base. When the mood strikes, a cup is as simple as scooping out 2 heaping Tb. and stirring them into a mug of warm milk. For an adult version, tip coffee or expresso with 2 heaping Hot Chocolate Mix and garnish with whipped cream and a dusting of cinnamon, or stir in a jigger of brandy.

Ingredients

  • Hot Chocolate Mix:
  • 1 c. milk
  • 2 heaping Tb. Hot Chocolate Mix
  • marshmallows or whipped cream, for garnishing
  • ground cinnamon or nutmeg
  • 3 oz. unsweetened chocolate
  • 1/2 c. water
  • pinch salt
  • 1 c. sugar
  • 1 c. heavy cream
  • 1/2 tsp. vanilla extract

In a small saucepan over medium heat, warm the milk and pour into a mug. You can also warm the milk in a mug in a microwave oven. Stir in the hot chocolate mix. Garnish with marshmallows and cinnamon.

For the Hot Chocolate Mix: In a heavy saucepan, or in the top of a double boiler, combine the chocolate and water over low heat, whisking occasionally until smooth. (As the chocolate melts, it will appear stringy.) Add the salt and sugar and continue to cook and stir over low heat until the sugar dissolves, 3-4 minutes. Remove from heat and let cool to room temperature. In a bowl, whip together the cream and vanilla until stiff peaks form. Fold in the cooled chocolate until blended. (Don't worry if tiny flecks of chocolate appear. They won't affect the delicious outcome.) Store in a covered container in the refrigerator. The mixture will keep for up to 5 days. Makes 15-20 servings.
