Ingredients

  • 8 oz. pitted dates corsely chopped
  • 1 1/2 C orange juice
  • 2 1/2 C packed flour
  • 1 1/2 C packed brown sugar
  • 1/2 t salt
  • 1 1/2 C soft butter
  • 2 C Quaker Oats (quick or old fashioned)
  • 1 C coconut
  • 1 C chopped walnuts or pecans
  • 1/2 C coconut for topping

Preparation

Step 1

In medium sauce pan, combine dates and LJ. Bring to boil. Reduce heat and simmer 20 minutes or until thickened. Let cool.

In large bowl, combine flour, sugar and salt. Cut in butter until mixture is crumbly.

Stir in oats, coconut and nuts. Spray 9 x 13 pan with Pam.

Measure out 4 C of oat mixture and set aside for topping. Press remainder in the bottom of the pan.

Spread date mixture evenly over the crust to within 1/4" of the edge. Sprinkle with remaining oat mixture. Sprinkle 1/2 C coconut on top and pat down gently.

Bake at 350 degrees for 35-40 minutes.
