Cappuccino Royales

Ingredients

• 2 C melted butter
• 1/4 C instant coffee
• 2 t vanilla
• 2 t rum extract
• 3 C sugar
• 3 beaten eggs
• 2 t baking soda
• 1 t baking powder
• 3 C milk chocolate chips
• 5 1/2 C flour

Preparation

Step 1

To melted butter, add instant coffee, vanilla, rum extract. Stir till coffee dissolves. Add sugar, eggs, baking soda and baking powder. Mix well.

Stir in chocolate chips. Add flour in one cup increments.

Form walnut sized balls. Roll in sugar.

Place on greased cookie sheet. Flatten slightly.

Bake at 350 degrees for 9-11 minutes. Cool on cookie sheet 2 minutes. Move to wire rack.

These freeze well.
