    bell peppers, chopped

    tbsp diced chilis

    red onion, chopped

    garlic cloves, chopped

    cans (15 oz ea) black beans, rinsed

    tsp ground cumin

  • 1

    tsp ground coriander

  • 1

    can (15 oz) fire roasted diced tomatoes

  • 1

    tbsp brown sugar

  • 1

    tbsp worchestershire sauce

  • 1

    lime, juiced

  • toppings:

  • dill pickles

  • cilantro

Directions

In large skillet, heat evoo on medium-high heat; add bell pepper, chilis, onion & garlic & cook 6-8 minutes; add black beans, cumin & coriander; season w/salt & pepper. In bowl, combine tomatoes, brown sugar & worchestershire sauce; add to skillet & simmer 2-3 minutes; stir in lime juice. Serve on rolls; top w/pickles & cilantro.
