Ingredients
- 1 T. butter
- 1/2 C. chopped onion
- 1 C. raw rice
- 2 C chicken broth
- 4 oz. can chopped green chiles
- 1 C grated cheddar cheese
- 1 tomato chopped
- 3 sprigs fresh cilantro chopped (optional)
Preparation
Step 1
Melt butter over med heat in a large skillet. Add onions. Cook until tender. Add rice, chicken broth, green chiles. Bring to a boil, reduce heat. Cover and simmer for 20 minutes. Remove from heat. Stir in cheese and tomato. Garnish with cilantro.
