Ingredients
- 2 tablespoons vegetable oil
- 1 red bell pepper, cut into 1/8" strips
- 1/4 pound mushrooms, sliced
- 2 blocks (12 ounces each) 5-spice flavored firm tofu, drained and cubed
- 1/4 bunch scallions, thinly sliced
- 1 teaspoon curry powder
- salt
- ground black pepper
- 1 tomato, finely chopped
- 1 tablespoon parsley, finely chopped

In a large saucepan, heat the oil over medium heat. Add the pepper and mushrooms, and cook for about 4 minutes, or until tender, stirring occasionally. Increase the heat to high and cook for 2 minutes, stirring until any liquid in the pan evaporates. Add the tofu, scallions, curry powder, and salt and pepper to taste. Reduce the heat to low, and cook for about 4 minutes, or until heated through. Stir in the tomato and parsley.
