Ingredients
- 8 oz andouille sausage cut into 1/4" slices
- 1 green pepper chopped
- 14 1/2oz can stewed tomatoes
- 1 c uncooked instant brown rice
- 8 oz chicken tenders, cut crosswise in half
- 12 c water
- bunch scallions, sliced

Preparation
Step 1
1) heat 12" skillet over md heat til hot. add sausage and peppers cooking 5 minutes, stirring occasionally
2) stir in tomatoes, rice, chicken, water and salt; heat to boiling over high heat. reduce to low; cover and simmer 10 minutes or until rice is tender.
3) remove from heat and stir in scallions
